The best thing you can do is learn the basic strategy for any blackjack game you choose to play. You can usually find these online pretty easily. They're typically in the form of a chart. These are particularly handy online since you can leave them minimized in the background and look at them if you are unsure of the perfect move.
 
Just remember to always play the best way you can! Intuition doesn't usually work out very well.

As an American, I agree. Our government needs to take a few hints from the Europeans when it comes to online gambling. I wish I could actually play with other software platforms. Good luck getting THAT to happen, though.
